Enough about my spiritual crisis! Let’s talk about my love for Costco.
I have a strong relationship with Costco. I’m pretty sure we were made for each other. I’m equal parts cheap-skate and spender, while he has everything I could ever need or desire, and all at a discount. He might pray on my weaknesses, but I’d like to think our dedication to each other is mutual.
I used to visit Costco about once every month or so, but the past year I just can’t seem to keep away. For example, after returning from visiting my family two weeks ago I went to see Costco three times in less than a week. That is quite a feat since I’m usually hauling three young children, so rest assured, I take this relationship quite seriously!
Since it’s clear to anyone that I’m obsessed, I’d like to post here and there about some of my Costco favorites. While I’m a huge fan of their pizza (not so much the churros), this first post is dedicated to veggies.
I know, BOR-ING! But I truly think that Costco’s vegetables can’t be beat and I can get the best bang for my buck there. Lately, instead of buying their pre-bagged frozen veggies, I’ve been buying a bunch of fresh vegetables separately and once I get home, I chop them up, mix them together some huge bowls, distribute them to ziplock bags, and freezing them until I need them.
I always include broccoli and mushrooms, but the other vegetables switch in and out depending on what they have. I usually do carrot, but this was my veggie haul from my latest trip.
I roast a big bag once a week using olive oil, salt, and pepper. Once roasted, I use the vegetables on top of salads, in rice bowls, stir-frys, quiches, pastas, and as side dishes for dinner.

Another reason I love you! I am obsessed with Costco. There are two people in our household and yet I still can't stay away for more than a week or two. Matthew tried to limit our Costco visits to once a month, but then we compromised on me going whenever I want to (I've learned that Costco is more fun on my own!) I never thought of roasting these veggies and freezing them…that is such a great idea! I just end up making a lot of salads. I'll buy the spring mix or power greens and then make salads until I'm sick of them. And I also try to make green smoothies with the power greens or spinach, but sadly we end up throwing out a good portion of the bag or box because we don't eat it fast enough. But still cheaper than buying it elsewhere (and better quality too). We also usually buy a box of the baby tomatoes and a huge bag of the organic baby carrots – they are great for snacking on and dipping in hummus.

I don't think Brad even knows how much I go to Costco… It's basically my Safeway, considering how much I go. But I really do get stuff we use and use a lot of, so I don't feel too bad about it. It's almost always just the food. I have almost tried that power green mix, but keep stopping myself because I'm sure I'll not use it all up. However, I always get the spring mix. Try putting leftovers warmed up a bit on a bowl of the spring mix for lunch–it's awesome!

Oh man, Costco has my whole heart. It is a serious problem. I also go twice a week at least. It's not good having it a mile from our home. I am a total Costco produce snob. If i have to get produce somewhere else I do it begrudgingly. Their sweet potatoes and cottage cheese and all the produce you mentioned and much much more are just the best. Keep the Costco posts coming.

Oh my goodness, the post was meant for me! I love Costco and I love vegetables. And the hubs and I are always looking for more ways to add vegetables to our diet. So, I'm a novice of a cook. Can I get some “roasting for dummies” tips? Like, how hot and how long? And do you usually stir once in the middle? Was the broccoli in that mix? Or just the asparagus, mushrooms, and brussel sprouts?

I don't mean to be a stalker, but I used to have the same problem until I read that you can stick the power greens in the freezer and use them from there for your smoothies!

Yes! I do this with spinach but didn't think of doing git with the powergreens. I'm so going to do that now! PS: it's not called “stalking” when it's a public blog and you've only commented once! I love hearing from people!

I have sweet potatoes from them in my cupboard right now. I can never seem to get behind cottage cheese, for some reason…

Yes! I am posting that for you tomorrow. Broccoli was in that mix! However, I don't recommend doing the Brussel sprouts, as they seem to get a little sour from freezing somehow.
